This study aimed to investigate the antibacterial mechanism of linalool emulsions (LE) against Pseudomonas aeruginosa (P. aeruginosa). Results from coenzyme I content, phosphorus consumption, ATP content and ATPase activity highlighted the energy limitation with LE. The decrease in enzyme activities involved in glycolysis (HK, PFK and PK), the pentose phosphate pathway (G6PDH and 6 PGDH) and the tricarboxylic acid cycle (CS, ICDHc, α-KGDH, SDH and MDH) also revealed that respiration was inhibited after exposure to LE. Meanwhile, oxidative stress appeared with LE as indicated by the increase of MDA, H 2 O 2 , O 2 − and GSSG, and the decrease of GSH. Together with the inhibition of defense enzyme (SOD, CAT and POD) and antioxidant enzyme (T-AOC, GR and GST) activities suggested disturbance of redox homeostasis. In particular, LE can effectively delay the quality deterioration of pork. These results analyze the antibacterial mechanism of LE against P. aeruginosa and explore its potential as a natural antibacterial agent. • Respiratory depression appeared in Pseudomonas aeruginosa with LE. • LE induced oxidative stress of Pseudomonas aeruginosa. • LE can control the quality deterioration of pork.
