In this article we explain the statistical background for the calculations necessary to obtain sample sizes for food control and monitoring. We present a case study of the calculation of a sample size of eggs in order to detect the exceedance of a legal limit. The description of sample sizes in the AVV LmH (German General Administrative Provision on Food Hygiene 2009, see annex 2) on which repeated inquiries occurred, are discussed and commented. Wir stellen die Hintergründe der erforderlichen Stichprobenumfänge in der Lebensmittelüberwachung dar und erläutern die Anwendung im konkreten Fall der Beprobung von Eiern auf Überschreitung eines Grenzwertes. Die Darstellung der Ermittlung von Stichprobenumfängen in der AVV LmH (2009, Anlage 2) und die dort genannten Zahlen, die mehrfach Anlass zu Nachfragen gegeben haben, werden diskutiert und kommentiert.
