Taikinan sitko muodostuu sekoitusvaiheessa, ja tämä on keskeinen tekijä taikinan ja valmiin tuotteen laadussa. Sitkoproteiinien suuri määrä kasvattaa tarvittavaa sekoitusintensiteettiä, mikä on otettava huomioon sekoitustehoa optimoidessa. Gluteenijauholla voidaan parantaa hampurilaissämpylän laatua ja taikinan rakenteen kestävyyttä. Tärkeät laatuominaisuudet, joihin gluteeni voi vaikuttaa, ovat hampurilaissämpylän korkeus, tilavuus, kimmoisuus/elastisuus, paino ja huokoskoko. Työn tavoitteena oli selvittää, vaikuttavatko taikinan sekoitusteho ja vesimäärä valmiin lisättyä gluteenia sisältämättömän hampurilaissämpylän rakenteeseen tilavuuteen, korkeuteen ja painoon. Työn alussa tuotteeksi valittiin korkea hampurilaissämpylä, koska haasteena on ollut tavoitekorkeuden saavuttaminen ilman gluteenijauhoa, jolla on saatu tuotteen rakennetta vahvistettua. Reseptistä vähennetty gluteenijauho korvattiin vähentämällä vettä, jotta taikinan leivottavuus säilyisi hyvänä. Valittuun reseptiin tehtiin viisi eri muutosta sekoitustehoon ja vesimäärään ja jokaisesta leivottiin kaksi erää. Jokainen erä leivottiin saman päivän aikana, jotta tuotanto-olosuhteet pysyivät mahdollisimman samana. Hampurilaissämpylöistä mitattiin paino, korkeus, maksimivoima ja tilavuus ja tuloksista tehtiin regressioanalyysit. Regressioanalyyseillä pyrittiin saamaan tietoa muuttujien (sekoitustehon ja veden) vaikutuksesta edellä mainittuihin vasteisiin. Rakennemittauksissa saatiin viitteitä sekoitustehon mahdollisesta vaikutuksesta hampurilaissämpylän kimmoisuuteen. Sekoitustehoa laskemalla voimakäyrät olivat samanlaiset, kuin referenssissä. Regressioanalyysillä saatiin selville, että sekoitusteholla ja vesimäärällä ei ollut tilastollisesti merkitsevää vaikutusta sämpylöiden tilavuuteen, korkeuteen, painoon tai maksimivoimaan tällä koeasetelmalla ja sen arvoilla. Tämä saattoi johtua siitä, että koesuunnitelman arvot (min. ja max. keskipisteet) olivat liian lähekkäin toisiaan. Gluteenijauhon poistaminen ei vaikuttanut painoon tai huokoskokoon. Korkeudessa jäätiin n. 1 mm alle tavoitekorkeuden ilman gluteenijauhoa. Jatkossa voisi kokeilla erää 7–8, jossa sekoitusteho oli 10,5 kW ja veden määrä 7 kg, sillä rakennemittauksissa voiman käyrä viittasi olevan kimmoisuudeltaan samankaltainen, kuin referenssissä. Hampurilaissämpylän pinta kestää paremmin rikkoutumatta pakkauksessa, jos sämpylän rakenne on kimmoisa. ; The gluten structure of the dough is formed during the mixing phase, which is a key factor in the quality of the dough and the finished product. The large amount of gluten proteins increases the required mixing intensity, which needs to be considered when optimizing the mixing efficiency. Gluten flour can be used to improve the quality of the burger buns and the strength of the dough structure. Important quality characteristics which gluten can affect are height, volume, elasticity, weight and pore size of the burger buns. The goal of thesis was to test if mixing intensity and amount of water affect the structure, volume, height and weight of a hamburger bun baked without added gluten. At the beginning of the thesis , a high burger bun with a large volume was chosen as the product, as the challenge has been to reach the target height without gluten flour that reinforces the product’s structure.The Gluten flour deducted from the recipe was replaced with less water to maintain good baking of the dough. Five different changes in mixing power and the amount of water were made to the selected recipe and two batches were baked for each recipe variation . Each batch was baked on the same day to maintain same production conditions for every batch. Weight, height, maximum strength and volume were measured from the burger buns and the result were analyzed with regression analysis. Regression analyses aimed to obtain information on the effects of the variables (mixing power and water) on the important quality characteristics of the bun. Structural measurements provided indications of the possible effect of mixing power on the elasticity of the burger buns. By deducting the mixing power, the structure measurement curves were similar to those of the reference. Regression analysis revealed that the mixing power and water volume had no statistically significant effect on the volume, height, weight, or maximum force of the buns with this experimental setup and its values. This could be due to the fact that the values of the test plan (min. and max. centers) are also close to each other. Removal of glu-ten flour did not affect weight or pore size. The height of the bun baked without gluten flour was approximately 1 mm below the target height. In the future it would be worth trying batch 7–8, where the mixing power was 10,5 kW and the amount of water was 7 kg because in the structural measurements the force curve indicated that its elasticity was similar to that in the reference. The surface of the burger buns is more durable in the package and prevents dent marks on top of the buns.
