Influence of different processing parameters and technologies on the 'Böckser' frequency with Austrian wines. Wine processing technologies of several wineries in different wine growing regions of Austria were compared. The influences of some processing steps on the formation of 'Böckser' (hydrogensulphide off-flavours) were evaluated on the basis of the frequency of this off-flavour in wines of the 1998 vintage. Results show that spraying residues as well as the stage of ripeness or the nitrogen content of the must are to be eclipsed in all probability as the primary cause of 'Böckser' formation. It also could be proved that 'Böckser formation can occur irrespective of the grape cultivar. With respect to our results we assume, that native microorganisms in the must deposit are responsible for an increased frequency of the formation of this off-flavour. The influence of these microorganisms is intensified by a reductive processing of the grapes (decrease of the redox potential in the must) and the addition of selected yeasts. But also some other processing steps could be characterized as 'Böckser'-stimulating and 'Böckser'-inhibiting, resp.
