  • Claim: 1. A method of baking a bun using a pan system with a base plate having guide holes extending through said base plate, said guide holes surrounding a male mold portion, said pan system having a housing with a bottom edge and a removable guide having upstanding guide posts for mating with said guide holes, said upstanding guide posts for locating said housing with respect to said male mold portion when said removable guide is mated to said base plate and said housing is located over said male mold portion, said method comprising: providing a cut shape from unbaked dough; overlaying said male mold portion with said cut shape to form overlapping seams in said cut shape; mating said removable guide with said base plate so that said guide posts pass through said guide holes in said base plate so that said guide posts extend beyond a planar portion in a direction of said male mold portion; positioning said housing over said male mold portion and between said guide posts so that said guide posts circumscribe said housing adjacent to said bottom edge; contacting said bottom edge of said housing with said base plate to form a uniform distance between said housing and said male mold portion; baking said cut shape with said housing constraining said cut shape; and removing a baked bun from said male mold portion.
  • Claim: 2. The method of claim 1, further comprising the step of bonding and sealing said overlapping seams when said dough rises and is constrained between said male mold portion and said housing.
  • Claim: 3. The method of claim 1, further comprising trimming a portion of said cut shape when said cut shape extends beyond where said housing contacts said base plate.
  • Claim: 4. The method of claim 1, wherein overlapping seams are formed when said cut shape overlays said male mold portion.
  • Claim: 5. The method of claim 1, further comprising the step of pressing said bottom edge of said housing against said planar portion so that a portion of said cut shape extending beyond said housing is trimmed.
  • Claim: 6. The method of claim 1, wherein said male mold portion has a terminal end surface spaced from said base plate by a first distance, a second distance defined by a width of said male mold portion where said male mold portion meets said base plate, said first distance being larger than said second distance.
  • Claim: 7. A method of baking a bun using a pan system with a base plate having a male mold portion extending therefrom including a pilot surface thereon adjacent to said base plate and terminating at an offset planar portion, said offset planar portion spaced above said planar portion, said pan system having a housing with a bottom edge and an inside surface adjacent to said bottom edge complementarily matching said pilot surface, said pilot surface for locating said housing with respect to said male mold portion when said housing is located over said male mold portion, said method comprising: providing a cut shape from unbaked dough; overlaying said male mold portion with said cut shape to form overlapping seams; positioning said housing over said male mold portion and locating said pilot surface inside said housing adjacent said bottom edge; contacting said bottom edge of said housing with said base plate to fix a distance between said housing and said male mold portion above said offset planar portion; baking said cut shape with said housing constraining said cut shape; and removing a baked bun from said male mold portion.
  • Claim: 8. The method of claim 7, further comprising the step of bonding and sealing said overlapping seams when said dough rises and is constrained between said male mold portion and said housing.
  • Claim: 9. The method of claim 7, further comprising trimming a portion of said cut shape when said portion of said cut shape extends beyond where said offset planar portion meets said pilot surface.
  • Claim: 10. The method of claim 7, wherein overlapping seams are formed when said cut shape overlays said male mold portion.
  • Claim: 11. The method of claim 7, wherein said male mold portion has a terminal end surface spaced from said offset planar portion by a first distance, a second distance defined by a width of said male mold portion where said male mold portion meets said offset planar portion, said first distance being larger than said second distance.
  • Claim: 12. A pan system adapted for baking a bun from a cut shape of unbaked dough, said pan system comprising: a base plate having a planar portion and a male mold portion extending therefrom, said planar portion having a plurality of guide holes extending therethrough and located around said male mold portion; a housing having a smooth inside surface and a bottom edge; a removable guide having upstanding guide posts for mating with said guide holes, said upstanding guide posts for locating said housing with respect to said male mold portion when said removable guide is mated to said base plate and said housing is located over said male mold portion;
  • Claim: 13. The pan system of claim 12, when said cut shape overlays said male mold portion, said dough conforms to said male mold and portions of said cut shape overlap to form at least two seam areas; and
  • Claim: 14. The pan system of claim 13, when said cut shape is baked with said housing located on said base plate by said removable guide and said guide posts, said seam areas are joined.
  • Claim: 15. The pan system of claim 12, wherein said base plate has a plurality of male mold portions extending therefrom.
  • Claim: 16. The pan system of claim 12, wherein said male mold portion has a terminal end surface spaced from said base plate by a first distance, a second distance defined by a width of said male mold portion where said male mold portion meets said base plate, said first distance being larger than said second distance.
  • Claim: 17. A method of uniformly filling a deep mold with dough, said method comprising: providing a base plate having a male mold portion including a pilot surface thereon adjacent to said base plate and terminating at an offset planar portion, said offset planar portion is spaced above said planar portion, said male mold portion extending from said offset planar portion, said male mold portion having a depth defined by a first distance between a terminal end surface and said offset planar portion, said male mold portion having a width defined by a second distance across said male mold portion where said male mold portion meets said offset planar portion, said first distance being larger than said second distance; providing a housing with a bottom edge and an inside surface adjacent to said bottom edge complementarily matching said pilot surface, said pilot surface for locating said housing with respect to said male mold portion when said housing is located over said male mold portion; providing a cut shape of unbaked dough; placing said cut shape over said male mold portion so that said cut shape overlays said male mold portion; placing said housing surrounding said cut shape so that said pilot surface is covered by said housing; forming an overlapping seam when said cut shape is placed over said male mold portion; baking said cut shape while said cut shape is located between said housing and said base plate; and joining said overlapping seam by constraining said dough between said male mold portion and said housing during said baking.
  • Claim: 18. The method of claim 17, further comprising trimming a portion of said cut shape when said portion of said cut shape extends beyond where said offset planar portion meets said pilot surface.
