Food-borne illnesses and diseases, or enteric diseases, are transmitted to humans from infectious organisms in food and water, generally resulting in gastrointestinal symptoms that vary in severity and duration. Enteric diseases may be caused by viruses, bacteria, or parasites. Technically, the phrase “food poisoning” refers to ingestion of food-borne toxins rather than infectious agents such as bacteria and viruses.
